Use a meat thermometer when in cooking, insert it into the fat side of the meat, be careful not to touch the bones. Bone conduction heat quickly, you will get the meat temperature false reading.

Where to insert:  to become an accurate indicator, a meat thermometer must be inserted correctly. The thermometer sensing area is about 1 to 2 inches long, and the region must be completely immersed in the deepest area of food.

Poultry: Insert it into the vicinity of the bird's breast inner thigh area, but do not touch the bones.

Red meats, roast, steak or chops: insert the thickest part of the center, away from the bone, fat and cartilage.
